A traditional holiday cookie with a not-so-traditional and not-so-secret star ingredient, tahini!

Ingredients
  • 1/2 cup molasses
  • 2 eggs
  • 1/3 cup tahini
  • 1 stick melted butter
  • 1 cup packed brown sugar
  • 2 cups all-purpose flour
  • 1 TBSP ground ginger
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1/4 tsp ground nutmeg
Directions
  • Step 1 Preheat your oven to 300 degrees.
  • Step 2 Mix all of the wet ingredients in a large mixing bowl until fully incorporated.
  • Step 3 Mix in the dry ingredients. Scoop out balls of batter with a spoon (should be about the size of an ice cream scoop) and place on a pre-lightly oiled baking sheet with parchment paper on it.
  • Step 4 Bake for 20 minutes or until cookies start to brown and are not soft anymore. Sprinkle with powdered sugar before serving.

It’s about time I got around to my holiday baking! This month has taken “busy” to a whole new level and I’m just trying to keep it all together and make until Christmas at this point. My dinners have been completely hit or miss this week, but baking for the holidays is one thing I’m serious about, so I got right down to it this weekend.

I don’t know about you, but half the reason I bake is to make my house smell like the holidays and gingerbread is just about the epitome of holiday scents. If only blogs had a scratch and sniff option – then you’d already know you wanted to bake these, without reading my commentary!

This is a recipe I’ve been envisioning for quite some time and I know a lot of you are probably scratching your head wondering why tahini and gingerbread make any sense together. I’m obsessed with tahini (if you’ve perused my blog already, you know this!) and I loveeee tahini cookies. Using tahini in baking achieves this perfect balance of sweet and savory and in this recipe it adds a creaminess to the batter that gives these cookies a surprise silky and buttery center. Bringing together the toasty sesame seed flavor of tahini with sweet and spicy gingerbread is a flavorful powerhouse. Try it once and you’ll be just as hooked!
