Bone Broth French Onion Soup

This french onion soup will warm your body + soul this winter, and may even keep you healthy too!

Ingredients
  • 3 medium yellow onions ~1 pound (sliced a little thicker than an iPhone)
  • 5 TBSP unsalted butter
  • 1 tsp honey (I love the Trader Joe’s Mesquite Honey)
  • 20 fluid ounces beef bone broth
  • 1 cup red wine, divided (I prefer a Malbec)
  • 1 TBSP fresh tarragon
  • 3 cloves garlic minced or grated
  • 2 tsp Worcestershire sauce
  • 2 bay leaves
  • Kosher salt and black pepper
  • 6 slices of a french baguette
  • 2 cups shredded Beecher's Flagship cheese (it's like a Gruyère and Emmental)
Directions
  • Step 1 Melt together the butter, onions, and honey in a large saucepan or Dutch oven over medium-high heat. Cook, stirring occasionally until softened and starting to caramelize, about 10-15 minutes.
  • Step 2 Slowly add 1/2 the wine, until the wine cooks into the onions. Continue to cook another 10-15 minutes.
  • Step 3 Add the garlic and tarragon. Season with salt and pepper, cook another 3-4 minutes.
  • Step 4 Add the remaining 1/2 cup wine, the bone broth, Worcestershire sauce, bay leaves, and a pinch each of salt and pepper. Increase the heat to medium-high until it starts to steam, then return the soup to a simmer.
  • Step 5 Simmer for 10 minutes. Meanwhile, preheat the oven to 400 degrees F. Arrange the bread slices on a baking sheet and toast for 10 minutes, until very dry. Then switch the oven to broil.
  • Step 6 Ladle the soup into oven safe bowls, discarding the bay leaves. Add a few slices of bread to each, then top generously with cheese. (It’s best when dripping down the sides of the bowl!).
  • Step 7 Place each soup bowl on a baking sheet and transfer to the oven, broil until bubbly and golden brown, no more than 5 minutes. Top with fresh thyme and serve steaming hot!

If you’ve been following us closely you know we’ve been all about the comfort food lately, especially soups. With the winter looming ahead and temperatures taking an unexpected dive down (we had snow here on Halloween!) all I want is WARMTH. And with election stress at an all time high, I’m pretty much eating my feelings right now too. But eating your feelings doesn’t mean it all has to be junk. French Onion soup at first glance may scream *calories* but it is one of those surprising recipes that is not just an indulgence, it is actually really good for you, especially the way we make it.

 

 

Start with onions – this bulb may make you cry, but save those tears (or cry tears of joy), they boast incredible antioxidant and healing properties! For that reason alone they are viewed as a prized vegetable in many cultures. Dating as far back as Middle Ages, onions were used to pay for goods and services, and given as gifts. Many cultures believe they even have medicinal properties. My old nanny for example used to cut up onion and garlic and put it by my sons bed when he had a cold. I always wondered why, but now that I’ve done my homework, it all makes sense!

And if you’re not sold on this recipe yet, the inclusion of bone broth should do the trick. It’s not just trendy, bone broth is rich in minerals that help build and strengthen your bones. It also contains many other healthy nutrients, including vitamins, amino acids and essential fatty acids. I mean does anything sound more nourishing right now than a warm cup or bowl of bone broth?! And as the base of this soup – you just can’t go wrong!
