The ultimate Chinese takeout appetizer, in bowl form! A healthier, more satisfying version of your the traditional egg roll, with enough for as many leftovers as you want!

Ingredients
  • For the meat:
  • 1/2 lb ground pork (or beef)
  • 1 tsp minced garlic
  • 1/4 cup minced scallions or Chinese chives
  • 1 TBSP sesame oil
  • 1 garlic clove, minced
  • 1 tsp white pepper
  • 2 TBSP oyster sauce
  • 1 TBSP cornstarch
  • 1 tsp salt
  • 1 TBSP brown sugar
  • 1 TBSP soy sauce
  • For the mix ins:
  • 1/2 cup grated carrot
  • 1/2 cup chopped water chestnuts
  • 1 cup shredded cabbage or coleslaw mix
  • 1/4 cup soy sauce
  • 1 tsp grated fresh ginger
  • Chopped cooked shrimp, optional
  • 1 whole egg
  • 2 tsp sriracha
  • 2 TBSP Sweet Chili Sauce
  • 1 TBSP sesame oil
  • 2 TBSP sliced green onions
  • Wonton wrappers for the crispy wonton noodles, optional (see below)*
  • Pad thai or chow mein style noodles
Directions
  • Step 1 Combine pork, chives, sesame oil, garlic, white pepper, oyster sauce, cornstarch, salt, sugar, soy in a bowl and mix well.
  • Step 2 In a large skillet, brown the pork or beef until no longer pink. Drain the meat. Add the grated carrot, cabbage/coleslaw, water chestnuts if using, soy sauce, ginger and sautee until desired tenderness is reached. Stir in the cooked shrimp.
  • Step 3 Make a well in the center of the skillet and add the egg, scrambling over low heat until cooked.
  • Step 4 Meanwhile, boil your water and cook your noodles, per box instructions.
  • Step 5 *If you are going to fry up some crispy wontons for garnish, slice a few wonton wrappers thinly. Coat a saucepan with a layer of vegetable oil and fry the wontons over medium heat.
  • Step 6 Stir in sriracha and sweet chili sauce. Serve over noodles, drizzle with sesame oil and garnish with green onions.

The craze that’s sweeping the nation finally graces the blog – egg roll in a bowl! Egg rolls are always on the list when we order takeout (yes, in a blue moon we do it!), but my biggest complaint is that I love them so much, one is just not enough! But then I feel guilty about eating more than one… (they’re def not known as the world’s healthiest food!). I know, the struggle is real! So what’s a girl to do to satisfy the egg roll craving?

Enter the egg roll in a bowl – a healthier, more satisfying deconstructed egg roll that is THE main event. It’s got all the components of your favorite takeout app, but in bowl form. Serve over a salad, serve over rice or noodles, whatever floats your boat. And get as creative as you want with the ingredient! This version is pork (the most traditional), with an optional shrimp add on, but the options are endless depending on what you crave. Get creative, add in all of the asian vegetables you want. I added chopped water chestnuts and even some leftover bok choy to mine.

 

 

Whenever I feel like I get in a rut and need to shake up my meals, dinner in a bowl is the way to go. Just pick a base (noodles, rice, grains), pick a protein, and related toppings and run with it.
