Pumpkin Pie Overnight Oats

Are you ready for the most epic overnight oats you've ever tasted? Look no further than our pumpkin pie version! I dream about this all fall!

Ingredients
  • 1/3 cup pumpkin-flavored Greek yogurt
  • 1/2 cup (heaping) rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 TBSP honey or agave syrup
  • 1/2 cup plain pumpkin puree
  • 1/4 teaspoon pumpkin pie spice
Directions
  • Step 1 Stir all ingredients together. Refrigerate for at least 4-5 hours, ideally overnight.
  • Step 2 Serve chilled, topped with your preference of fruit, nuts, coconut flakes, etc.

From September through November, you can probably bet that almost everything I make (or dream about making) is an ode to pumpkin. Whether it’s a pumpkin apple crisp, pumpkin hummus, pumpkin alfredo or even the most inventive recipe of late – pumpkin spiced lamb chops (recipe coming soon!) – I am never disappointed when there’s pumpkin in a recipe. I’m just lucky that Marc indulges me and let’s me try out all of these crazy flavor combinations. He never complains! I’ve even converted him to drinking pumpkin spice coffee on the reg!

Over the past few years, this recipe has become a tried and true breakfast staple in our house. I love me some overnight oats, no matter what the flavor combination, but #ngl this pumpkin version is pretty epic! Creamy greek yogurt, rich pumpkin puree and rolled oats, packed with fiber and protein. I can’t think of a better way to start my day, can you? It’s just a little extra effort the night before (I’m only asking for 5 minutes of your time) and then you don’t even have to think twice the next morning. Perfect for mornings on the go (even if you only have to go your at-home office in the next room).
