Ingredients
  • 8 oz cream cheese, softened
  • 1 cup mayonnaise
  • 1 14 oz can of quartered artichokes, drained
  • 1 c fresh grated parmesan, plus more for sprinkling
  • 1 cup frozen spinach, thawed
  • 3 minced garlic cloves
  • Pepper to taste,1/4 cup chopped sun-dried tomatoes, optional
Directions
  • Step 1 Preheat oven to 350 degrees. Mix ingredients together in an oven safe dish. Once fully incorporated, sprinkle additional parmesan on top of the dip.
  • Step 2 Bake for 20 minutes, uncovered. Serve with crackers or fresh bread.

Thanksgiving is SO close that I can almost taste it, can you? Maybe that’s because my office hosted a Thanksgiving potluck this week and I’ve already had a “teaser.” Now I can’t wait! But it also means I really need to get a move on menu planning. We’re hosting 16 people this year and I’m so behind this year, mainly because work has been crazy and I’ve worked the last two Sundays (hosting family volunteer events). But this week I promised myself I would get my menu planned and do my big shopping trip, always to Trader Joes. That way I’ll be ready to start cooking next Sunday, eek!

One thing that I know will always be on the menu is this artichoke dip. It’s a classic recipe passed down from my Mom that makes an appearance at almost all of our family holidays. You can find the original recipe here, along with my full Thanksgiving guide. But this year, I decided to put my own twist on the dip – adding some spinach and sun-dried tomatoes. For some reason, I feel like these small additions just make the dip look even more festive. I was feeling really adventurous the night I made this and also decided to grate some of Trader Joe’s Unexpected Parmesan Cheddar Cheese (the most addicting cheese!) on top instead of parmesan. Let’s just say the feedback from the potluck lunch included words like “decadent” and “indulgent.” I mean

 

 

So if you’re looking for a simple appetizer recipe (for any holiday occasion, not just Thanksgiving) – this is a great bet! Just warning you – it might be so good that you won’t have leftovers. Good problem to have? I think so!
