Snowball Cookies

A perfect, bite size treat you can enjoy the whole winter season.

Ingredients
  • 1 cup butter, softened
  • 1/2 cup sifted confectioners sugar
  • 1 tsp vanilla
  • 2 1/3 cups sifted flour
  • 1/4 tsp salt
  • 3/4 cups finely chopped pecans or walnuts
  • Additional confectioners sugar for coating
Directions
  • Step 1 Cream together butter and sugar, then add the remaining ingredients (up through the nuts).
  • Step 2 Chill the dough for 1 hour in the fridge.
  • Step 3 Preheat the oven to 350 degrees. Remove the dough from the fridge and roll into 1 inch balls. Place on a baking sheet about 2 inches apart.
  • Step 4 Bake until set, about 12-15 minutes, but not brown.
  • Step 5 While still warm, roll the cookies in the additional confectioners sugar.Cool and roll in sugar again before serving.

Pretty much from Halloween onward, this fall has felt like a marathon of holiday planning, prep and cooking. We’re now reaching the finish line – Christmas is just days away – and you betcha, we’ll be cooking up a storm. ‘Tis the season of gingerbread, candy canes, egg nog and, of course, the Christmas roast! I sense AWNW “theme” menu in the works! Stay tuned…

We’re visiting my parents for the holidays, which means a lot of our recipes are old family favorites passed down from my Grandmother, making them all the more special. The minute we got through the door, we were greeted by the fresh baked smell of these snowball cookies, so I figured I’d post them first. Especially since I’ve received some requests for more baking recipes on the blog (I’ve been listening!). These babies are light and sugary with a little bit of crunch. They’re great to bake for cookie swaps and chances are you probably have all the ingredients you need right in your pantry. Why don’t you bake up a batch today and leave some out for Santa on Christmas Eve? I bet these will quickly become a family holiday favorite!
