Roasted Honey Garlic Carrots

A super easy side starring one of our favorite root vegetables.

Ingredients
  • 1 bunch of carrots, peeled and cut into even length
  • 1 TBSP melted butter
  • 1 TBSP honey
  • 2 crushed garlic cloves
  • 1 tsp sea salt
Directions
  • Step 1 Preheat your oven to 400 degrees.
  • Step 2 Toss carrots with melted butter, honey and garlic in a glass bowl.
  • Step 3 Sprinkle with salt and arrange in a single layer on a baking sheet. Roast for 25-30 minutes, turning once, until soft and slightly charred.

This is one of those super easy sides that save me on a busy weeknight.  When I “invented” this recipe, I winged it at the last minute to serve with our beer can chicken. I used rainbow carrots for that extra pop of color, but your everyday carrot will definitely do. Marc threw out the idea of using honey, which I was worried would burn, but it ended up being a perfect compliment.

 

 

I roasted it just long enough to get that nice char on the carrots, about 30 minutes.

 

 

This would pair well with chicken or duck or in my roasted carrot salad (coming soon!). Enjoy!
