Ingredients
  • 1 head of garlic
  • 1-2 tsp olive oil
Directions
  • Step 1 Preheat your oven to 400 degrees. Peel off the papery outer layers of the garlic.
  • Step 2 Slice off the head of the garlic to expose the tops of the garlic cloves.
  • Step 3 Drizzle 1 to 2 teaspoons of olive oil over tops of the garlic cloves and then wrap the head in tinfoil.
  • Step 4 Roast for 50 minutes until the garlic cloves are soft.

You know how they say it’s the little things that make all the difference?  Roasted garlic is one of those things.  Roasting a head of garlic could not be simpler, but the uses for it in the kitchen are endless.  A few of our favorites: roasted garlic butter, roasted garlic mashed potatoes, roasted garlic aioli… the list goes on and on.  This particular night, we served it with a fresh loaf of bread and our homemade butter.  I also love it as a topping for salads, or sometimes, I’ll be honest, just by the spoonful!  It certainly doesn’t hurt that it also has amazing health benefits (I’m talking about anti-cancer compounds, immune-strengthening molecules and heart disease-preventing antioxidants – wowsa!)  If the roasted garlic smell wafting through your kitchen isn’t motivation enough, that should certainly inspire you to introduce some garlic roasting into your kitchen repertoire.  So crank up your oven and let’s get roasting!
