Quick Homemade Cinnamon Rolls
Marc (AKA the “The Impatient Cook” – look out for more recipes by him on the blog soon!) has been begging me for cinnamon rolls for weeks, but we have been so busy sheltering in place, some how I didn’t get around to it. He finally gave up and make them himself for a nice Sunday treat… and they were just as AMAZING as they look.

 

With all of this free time on our hands, we’ve been baking a LOT – everything from challah to pizza to focaccia to muffins and don’t forget yesterday’s donuts too (recipe coming soon!). But these cinnamon rolls were so insane, they are right up at the top of our hits list now.

 

Here are the 1, 2, 3…10 Cinnamon Rolls! (And a huge bonus, they’re dairy free!)

(1) Melt 1/2 cup Earth Balance butter with 1/2 cup milk (you can use any type, he used Almond milk) and microwave until the butter is melted (about 1 min, 30 sec)
(2) Mix 3.5 cups of flour, 1.25 cups of white sugar, and dash of salt and throw it in a standmixer until it is mixed together
(3) Put the butter mixture on top of the flour, directly in the stand mixer, and add in 2.5 teaspoons of yeast (ideally quick rise but normal works too). Mix this with the warm butter/milk mixture and the egg, then mix this together until it becomes a ball of dough.
(4) Take the ball of dough out of the mixer and put in a bowl and let rise for 5 minutes.
(5) Roll out the dough on a floured surface and make a mixture of 1 TBSP of cinnamon (Ceylon cinnamon if you have – it has a sweeter, more complex flavor than regular cinnamon) with 1/4 cup of white sugar and 1/4 cup of brown sugar, whisk it together, and spread this over the dough (he used a sifter and didn’t let any of the mixture go to waste)

 

 

 

(6) Roll the dough up tightly and cut it into 1/2 inch-we buns, voila, ready to go!

 

(7) Let the raw cinnamon buns sit for about 15-20 minutes in a warm area (I like to turn on a stove
for 30 seconds on high and then turn it off and let the buns sit on top of the off stove). Cover with a damp paper towel or kitchen towel.

 

(8) Bake at 350 degrees for 20 minutes.

 

(9) Make icing: 1/4 cup butter, 1 tsp vanilla, 1 cups powdered sugar, 1 TBSP milk – I leave it in the fridge until ready to coat the buns
(10) The best step – EAT THEM!

Making your own fresh-baked cinnamon buns don't have to intimate you! Our easy, dairy-free recipe will have you smiling from ear to ear!

  • Dough:
  • 1/2 cup Earth Balance or vegan butter
  • 1/2 cup almond milk (feel free to substitute any milk you have)
  • 3.5 cups of flour
  • 1 and 1/4 cups of white sugar
  • 1/4 tsp salt
  • 2 and 1/2 tsp of quick-rise yeast
  • 1 egg
  • Filling:
  • 1 TBSP of cinnamon (Ceylon cinnamon if you have!)
  • 1/4 cup of white sugar
  • 1/4 cup of brown sugar
  • Icing:
  • 1/4 cup Earth Balance/vegan butter,
  • 1 tsp vanilla
  • 1 cup powdered sugar,
  • 1 TBSP almond milk
Directions
  • Step 1 Preheat your oven to 350 degrees. Melt the butter with the milk in your microwave until the butter is liquified, about 1 minute, 30 seconds.
  • Step 2 Mix together flour, sugar and salt in a standmixer, until it is combined.
  • Step 3 Pour the butter mixture on top of the flour, directly into the stand mixer, add the yeast. Mix until it all the ingredients come together, then add the egg and continue mixing until it becomes a ball of dough. 
  • Step 4 Take the dough out of the mixer, place in a lightly-oiled bowl and let rise for 5 minutes.
  • Step 5 Roll out the dough into a rectangle on a floured surface. Stir together the cinnamon, white sugar and brown sugar, whisk it together, and sprinkle this evenly over the dough. Tightly roll the dough up and cut it into 1/2 inch wide buns.
  • Step 6 Let the buns sit out for about 15-20 minutes in a warm area to rise. Cover with a damp paper towel or kitchen towel. Then bake at 350 degrees for 20 minutes.
  • Step 7 While they bake, whisk together the remaining butter vanilla, powdered sugar and almond milk. Leave the icing in the fridge until you are ready to frost your buns.
  • Step 8 Remove cooked buns from the oven, let cool for 10 minutes. Frost and devour!
