Pumpkin Seed Apple Crisp

The ultimate fall match made - pumpkin meets apple crisp! You can't go wrong with our twist on the traditional apple dessert.

Ingredients
  • 6 apples, peeled cored and sliced into wedges
  • 3/4 cup brown sugar
  • 3/4 cup uncooked old-fashioned oats
  • 1/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 cup butter
  • 4 TBSP spiced pumpkin seeds
Directions
  • Step 1 Preheat oven to 375 degrees
  • Step 2 Divide apples among 4 lightly greased ramekins
  • Step 3 Combine brown sugar, oats, flour, pumpkin pie spice and cinnamon in a bowl. Cut in butter with a fork until crumbly.
  • Step 4 Sprinkle sugar topping over apples. Top each ramekin with 1 TBSP of pumpkin seeds
  • Step 5 Bake ramekins for 25 minutes until topping is golden brown. Serve with whipped cream or ice cream.

We went apple picking almost a month ago now and believe it or not, I’m still trying to find ways to use up our bushel of apples. This recipe is a twist on the classic apple crisp my Mom used to make. Same ingredients and method, I just added a pumpkin twist to ours and cooked the crisps in individual ramekins as opposed to one big baking dish. I then topped off each ramekin with a sprinkling of pumpkin seeds from this recipe we posted earlier. You can easily make it without the pumpkin pie spice and pumpkin seeds for a traditional apple crisp. Want to take it one step further? A scoop of pumpkin pie ice cream on top is the icing on the cake!
