A great side for almost any main dish. Chicken, lamb, steak, Thanksgiving turkey. A real crowd-pleaser and oh so healthy!

Ingredients
  • 1 head of cauliflower, chopped roughly
  • 4 cloves garlic
  • 1/3 cup nonfat buttermilk
  • 2 tsp olive oil
  • 1 tsp butter
  • 1/2 tsp salt
  • Ground pepper to taste
Directions
  • Step 1  Place cauliflower florets and garlic in a stovetop pan. Add about an inch of water, bring to a boil and then cover and steam until very tender for 15 minutes.
  • Step 2 Place the cooked cauliflower and garlic in a food processor. Add buttermilk, 2 teaspoons olive oil, butter, salt and pepper and process until smooth and creamy. Serve immediately.

There’s something so comforting about a bowl of cauliflower mash.  While mashed potatoes are billed as the ultimate comfort food, I would argue that cauliflower mash has the edge these days.  You just can’t beat how light and fluffy they taste, especially when you consider how much healthier they are.  While many low-carb dishes can be lacking in taste and finesse, cauliflower mash will make you never want to look back.  Plus, they have a simple elegance that makes them the perfect pairing to just about any main dish.  I don’t always have buttermilk handy, so I’ll give you some hacks for making your own substitute (unless you ask Alexa!).  Best case scenario, you can always use your very own buttermilk – leftover from this homemade butter recipe!

 

 

 

 

 

If you don’t have buttermilk handy here are some substitutions suggestions:

  • 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup or
  • Add 1-3/4 teaspoon of cream of tartar to 1 cup of milk

Let it stand for 5-10 minutes to thicken and curdle.  Ta-da, instant buttermilk!
