Mixing up our breakfast game with bacon pancakes. Easy as pie and oh so yummy!

Ingredients
  • 3 strips of bacon, uncooked
  • 1 cup flour
  • 2 TBSP sugar
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup buttermilk
  • 1/4 tsp vanilla
  • 1 egg
  • 4 TBSP melted unsalted butter
Directions
  • Step 1 Melt the butter first, in the microwave for 45 seconds. Place it in the fridge for 3 minutes to cool slightly.
  • Step 2 Cook up your bacon in a stovetop skillet. Yes, it’s messier than the microwave but the skillet allows it to get it nice and crispy. Remove to a paper towel to drain, then cut the slices in half.
  • Step 3 Mix together dry ingredients in a bowl. In a separate bowl, mix together the wet ingredients.
  • Step 4 Add liquid ingredients into the bowl with the dry ingredients, slowly letting it seep in as you stir.
  • Step 5 Then heat your griddle to medium-high (375 degrees). Butter the grill, then pour the batter into desired shape. Add a strip of bacon to the center of the batter.
  • Step 6 Once the batter starts to bubble (about 2 min), flip the pancake. Then press down lightly with the spatula on top. The second side should cook slightly faster, about 90 seconds at most.
  • Step 7 Serve with syrup and fresh fruit.

 

Once you master the art of the perfect pancake (we’re pretty confident we have, just sayin’), you are ready to branch out and try all sorts of different *secret* ingredients. The more creative, the better – in our opinion. Bacon pancakes are just a marriage of the two best breakfast components, so it’s a good place to start. I have a long list of other variations I want to try (most definitely starting with pumpkin, followed by pb&j), so stay tuned for those later on! If you’re a bacon obsessed family like we are, these pancakes will become an instant hit and likely make some repeat appearances in your weekend breakfast repertoire. I can pretty much guarantee they won’t disappoint!
