A spring toast that will have you swooning! Rich & buttery French radishes and silky fresh ricotta are underscored by hints of fresh mint and sweet honey. Perfect for your Kentucky Derby party or any spring shindig!

Ingredients
  • 4 large French radishes, scrubbed
  • 1 TBSP butter
  • Pinch of salt
  • 1/2 tsp lemon juice
  • 1/4 tsp lemon zest
  • 1/3 cup fresh ricotta
  • A dozen or so fresh mint leaves
  • 1 TBSP honey, for drizzling
  • Rustic bread or a package of small toasts - I used Trader's Joes Brioche Toasts
Directions
  • Step 1 Toast the bread, if using, and set aside. Cut the radishes in half lengthwise and then cut each half into 1/4″ thick half moon slices.
  • Step 2 Melt butter in a small skillet over medium-low heat, add radishes, and cook until tender, 3 to 4 minutes. Stir in lemon juice, lemon zest and salt, then remove from heat. Allow to cool slightly.
  • Step 3 Assemble your toasts by smearing them with a spoonful of ricotta. Top with radishes, then mint leaves. Drizzle with honey and sprinkle with more sea salt (I recommend Pink Himalayan) to top them off. Serve immediately. 

 

Radishes are clearly on my mind this month. I am still positively swooning over my spring radish salad, so much so that I’m making it again tomorrow night for a dinner party! This recipe is essentially that salad, in toast form, and I’m going to be straight up with you – it’s simply divine.

 

 

The inspiration came to me in the middle of my party prep for our son’s first birthday. I was planning to make cucumber toasts as part of my Corduroy-theme, but Marc thought they were kind of blah. So I quickly changed gears and surveyed what we had in the fridge. Instead of starting from scratch, I figured I would run with the radish/mint idea, pair it with ricotta (because who doesn’t LOVE ricotta toast?!) and drizzle with honey – just as I did with the salad. Having that salad recipe so fresh in my mind made this recipe so easy to create on the fly. And, not surprisingly, it was one of the biggest hits at the party.

 

 

And since this spring appetizer was such a hit the first time around, I’m highlighting it again for the Kentucky Derby tonight!
