Ginger Miso Salmon

This nutrient-rich sweet and savory salmon will put a twist on your weeknight dinners. Your sheet pan game has never been stronger!

Ingredients
  • 4 4-6 oz fillets of salmon (have your fishmonger portion them for you!)
  • 2 TBSP white miso paste
  • 1 TBSP ginger paste (I used the Trader Joe's Stir-In Paste)
  • 1 TBSP olive oil
  • Kosher salt for seasoning
Directions
  • Step 1 Preheat your oven to 350 degrees. Lightly grease a baking sheet.
  • Step 2 Whisk miso with ginger paste and olive oil until combined.
  • Step 3 Season salmon filets with salt and then rub paste all over top of the salmon.
  • Step 4 Place fillets on the sheet and roast for 12-15 minutes (Depending on preference for doneness, we like ours rarer so went with 12). Switch the oven function to broil and broil for 1-2 more minutes, depending on the thickness of the salmon. Pictured salmon is served with garlic broccoli and quinoa.

I’m telling you, nothing beats a sheet pan salmon when you’re looking for a fast and easy weeknight dinner. If you’ve been following me for awhile you know salmon is almost always in my line-up; we easily eat it once a week. You can find another fave of mine from the blog here. I know there are a fair share of salmon-haters out there (some people think it’s too fishy?) but I honestly don’t get that. To me, it’s hands-down the most flavorful fish out there and it boasts SO many health benefits, a win-win! And by adding miso and ginger to this salmon in particular, which both regulate digestion and boast their own fair share of other health benefits, you really can’t go wrong.

This recipe was something I tested last week on one of my busiest nights. I already forget what event I had that night (I say ‘Yes’ to too many things these days!), but the salmon proved to be just as easy – only 3 ingredients and 3 steps! – and delicious as I was hoping. SO much so that I couldn’t resist recreating it this week for the blog, especially after I got a few requests for it from a few fellow mamas out there! I only tweaked one thing – I put it under the broiler for the last 2 minutes this time around to lightly crisp up the miso “crust.” This subtle tweak gave it a slightly nutty flavor, which was such a nice contrast to the silky salmon.

The only bummer about tonight’s meal is that I went out of my way to make dinner tonight (even though my husband is traveling), only to find out that my au pair was going out to dinner too, so then I had no one to share this amazing salmon with! My 2 year old will generally eat salmon too, but tonight all he wanted was his “chuggets” (his code word for chicken nuggets) and my salmon paled in comparison to that unfortunately. Cooking for one thankfully didn’t stop me – it just means I have lots of leftovers. And the only plus side to Marc traveling is that I actually had the time tonight to sit down and write up the post for you! Once I teased about it on Instagram and committed to posting, I had to follow through. Even as my eyes were starting to glaze over and my bed was calling, I was determined to get the recipe done and up. So I hope you’ll try it and comment below to let me know what you think!
