Pumpkin Chicken Salad
Your fall lunch game has never been stronger! Make the most of pumpkin season while you still can.
Ingredients
- 2 cups chopped cooked chicken leftover (or rotisserie)
- 2 TBSP canned pumpkin
- 1/3 cup mayo
- 1 tsp celery salt
- 1 tsp garlic salt
- 1 small apple, chopped finely
Directions
- Step 1 Mix the chicken with the canned pumpkin, mayo and seasonings until fully blended. Gently fold the apples into the salad. Serve immediately or refrigerate.
By now, anyone who follows our blog knows that I’m a bona fide pumpkin fanatic. Between the months of September-November (the months when pumpkin is “seasonally acceptable”), there is almost nothing I will stop at to incorporate pumpkin into my diet. It’s a short season and I may as well take advantage!
Besides the usual suspects, this month’s pumpkin recipe experiments have included a riff on brocc your body’s pumpkin meatballs, last week’s Pumpkin Hummus (a Thanksgiving staple) and now you’re witnessing the latest and greatest – Pumpkin Chicken Salad! It may sound strange, but it’s actually a genius combination and now I’m just left wondering why it took me so darn long to come up with it!
The inspiration came to me thanks to a case of the leftovers. Anyone else love finding creative uses for leftovers? It’s a great way to clean out your fridge, but without the waste! I had leftover pumpkin puree from the pumpkin hummus recipe and leftover chicken breast from our Chicken Under a Brick (another blog fave!) so as I was surveying the fridge pondering what to have for lunch – I decided, why not get a little creative today? Some simple chicken salad seasoning (celery salt is always my go to) and some chopped apple complete this lunchtime ode to pumpkin.
This week I’m enjoying this recipe with chicken, but I’m already counting down the days to when I can substitute left over turkey for pumpkin turkey salad. Because is there really anything better than Thanksgiving leftovers? Not when you’re a foodie like moi! Check back to see that post soon!
