Shishito Peppers
Don't let the super simple preparation fool you, these peppers pack a serious punch! Your appetizer game has never been stronger.
Ingredients
- 1 bunch shishito peppers
- 1 TBSP olive oil
- A healthy dash of kosher salt
Directions
- Step 1 Heat a stainless steel pan over high heat with the olive oil.
- Step 2 Rinse the shishito peppers and place in the pan once hot.
- Step 3 Cook over high heat until the shishitos are soft and starting to blister, stirring occasionally ~5 minutes
- Step 4 Sprinkle with salt and transfer to a dish to serve.
Could this recipe get any hotter right now? Shishito peppers are popping up on menus everywhere, but we’ve been making them for years. They’re one of our favorite go-to appetizers when we want to keep things fresh and simple. Just pop them in the skillet, heat until they start to char, and season generously with salt (emphasis on generously!). Kosher salt will definitely do the trick, but you can always experiment with flavored salts too. My favorite is the Amagansett Sea Salt company’s Sag Harbor Blend of sea salt/aleppo pepper/annatto salt which I picked up at a roadside farm stand in East Hampton.
Full disclaimer: each batch of peppers is different but watch out for the spicy ones! You never know until you take a bite that you have one which will set your mouth on fire. Usually about 1 in 10 are spicy, but hey, that’s half the fun!
