Cinnamon Sugar Donut Muffins
Cinnamon sugar donut meets muffin and the combination is divine! Everything you expect from this rich, buttery pastry, but in the lightest, fluffiest form.
Ingredients
- 1/2 cup granulated sugar
- 1 1/2 cup all purpose flour (use cake flour for even lighter/fluffier muffins!)
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 cup whole milk
- 1/3 cup butter, melted
- Topping:
- 1/4 cup sugar
- 1/4 cup light brown sugar
- 1/3 cup butter, melted
- 1 tsp cinnamon
Directions
- Step 1 Preheat oven to 350 degrees. In a large mixing bowl, sift together all dry ingredients.
- Step 2 Create a well in the center and add the egg, milk, melted butter and vanilla. Stir just until combined, but do not, I repeat do NOT overmix.
- Step 3 Scoop batter into greased muffin tins, using a large ice cream scoop. The first time around this yielded 10 muffins for me, but I would prefer them a little bigger, so next time I will make 8.
- Step 4 Bake for 20-25 minutes (23 minutes was my sweet spot) until they start to turn golden around the edges and a toothpick inserted in the center comes out clean. Prepare the topping during this time.
- Step 5 For the topping, mix sugars and cinnamon in a small bowl. Melt the butter and pour into another small bowl.
- Step 6 When you remove the muffins from the oven, let cool slightly, about 2 minutes. Then dip the warm muffins in the melted butter then dip/roll the muffin in cinnamon sugar. Serve and devour warm!
I have been craving these glorious muffins since the day we stumbled across them at the Kitchen Table, an unassuming, farm-to-table cafe/coffee shop, located in the local hamlet of Scotts Corners. I love discovering places like this, the more off the beaten path the better. No matter where we are, we’re always wearing our chef-hats and undoubtedly find inspiration for new things to cook or bake. Case in point – these muffins!
On this particular morning, these pastries were peeking out from under the glass pastry dome – Marc spotted them first! – and we just couldn’t resist trying one. They were plump and fluffy, coated in a thick and rich layer of sugary goodness and smelled divine! We asked for ours reheated (as the chef recommended) and waited with much anticipation for the muffins to return. It was everything we dreamed of and more! I think we can all agree that there’s almost nothing better than biting into a warm, fresh donut coated in cinnamon sugar, but in muffin form, it is heavenly!
Since I can’t make the trek to Scotts Corners every day (believe me, I’ve considered it), Marc charged me with the task of recreating these beauties for the blog. And boy am I glad he did!
