For those who can't decide between fluffy buttermilk waffles and avocado toast... these savory waffles are THE answer to your prayers!

Ingredients
  • 2 eggs - separated into yolks and whites
  • 1/2 cup buttermilk
  • 1 1/4 cup coconut milk
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 1 tsp cayenne powder
  • 1/2 tsp ground oregano
  • 1/4 cup vegetable oil
  • 1 3/4 cups all purpose flour
  • 3 tsp baking powder
  • 3/4 cup grated Parmesan cheese
  • 2 or 3 strips of cooked bacon, chopped
  • 2 large ripe avocados sliced
Directions
  • Step 1 Separate the eggs, putting the whites aside. Beat the 2 yolks, then add buttermilk, coconut milk and oil to the yolks. Add oregano, salt, pepper and cayenne to the liquids and beat together.
  • Step 2 Mix flour, baking powder, Parmesan and bacon in a separate bowl and then add to the egg/buttermilk mixture.
  • Step 3 Lastly, whisk just one of the egg whites and fold into the batter. Do not overmix, the batter will be a little lumpy but this will keep them fluffier!
  • Step 4 Preheat your waffle iron and spray with cooking spray. Pour in batter, filling about 2/3 of the way, and cook according to manufacturer’s directions until golden brown. Top with slices of avocado, garnish with extra Parmesan cheese and serve with bacon or syrup!

 

One of the best parts about being married to an equally amazing (if not better!) chef is that in addition to cooking and sharing so many meals together, I often get treated to delicious surprises, especially when it comes time for birthdays, anniversaries, or today’s occasion: Mother’s Day!  Mother’s Day brunch is a tradition so many of us enjoy year after year, and whether you go out or stay in, it’s so nice to treat Mom to something special to kick off the day. Extra points for breakfast in bed, but pretty much any meal where Mom doesn’t have to lift a finger is sure to be appreciated.

 

No matter what Marc made it would’ve been special, but he put an extra special twist on this particular breakfast that really took it the extra mile.  For those of you who are avocado toast-crazed like me, what could possibly be better than marrying this breakfast go-to with fluffy buttermilk waffles?!  This recipe literally satisfies every craving you could possibly have, bridging sweet and savory all in one bite.  If you can’t decide between breakfast, brunch or lunch – these waffles are THE answer to your prayers.

 

 

There are so many dynamic flavors that make this waffle truly memorable – crunchy bacon, shredded Parmesan, a pinch of cayenne and that creamy sliced avocado to top it all off.  Yet all of those savory flavors are balanced by the subtle sweetness of the coconut milk, the hint of rich buttermilk, a squeeze of fresh lemon and yes, if you dare to go for the full Monty, a drizzle of deliciously sweet maple syrup seals the deal.

 

 

This the ultimate crowd-pleasing brunch dish and one that’s definitely going to reappearing at many a Mother’s Day brunch in our future!  So stop scratching your head about what to make for brekkie and get on the savory waffle train!
