3 Cheese “Cheesy” Dip

3 Cheese Dip

Say cheese because this is a dip you will WANT to remember! This easy homemade cheesy app is extra creamy and delicious, with each cheese lending a distinct flavor to the dip.

Ingredients
  • 2 1/4 cups whole milk
  • 2 tablespoons unsalted butter
  • 1 small Spanish onion, finely chopped
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • Pinch cayenne pepper
  • 1/3 pound blue cheese, crumbled
  • 1/3 pound Trader Joe's Unexpected Cheddar, grated
  • 1/3 pound mozzarella cheese, shredded
Directions
  • Step 1 Place the milk in a small saucepan and bring to a simmer over low heat.
  • Step 2 Heat the butter in another larger saucepan over medium heat. Add the onion and cook until soft.
  • Step 3 Stir the flour into the saucepan with the onion and cook for 1 minute. Now slowly whisk in the warm milk, and continue whisking until thickened. Season with salt and cayenne pepper.
  • Step 4 Continue cooking for 5 minutes, whisking occasionally. Remove from the heat and whisk in the cheeses, 1 spoonful at a time. Continue to whisk until dip is smooth. If you find it too thick, thin it out with a little extra milk. Serve sauce warm with potato chips for dipping.

Thanksgiving is a week behind us, which means it’s time to focus on the next holiday, well in our case holidays: Hanukkah and New Year’s Eve. I have a solid line up of recipes for the former, but this is a big year for the latter. We are hosting a New Year’s party, which we haven’t done in years, and I am going ALL out! Starting with this dip! It’s the cheesiest, dreamiest, most indulgent dip you can imagine. And in my opinion, it really is worth every darn calorie. You’re going to need something to help balance out all that champagne you’ll be drinking!

 

I used to LOVE New Year’s Eve when we lived in the city. There is so much energy in NYC – in general, but especially on New Year’s – and it feels like everyone is celebrating, so it really gets you into the spirit. My best friend and I hosted a New Year’s Eve party at her apartment for a few years, which were probably some of the more fun NYE in my whole life. She is definitely the hostess with the mostest, so our efforts combined always made it a pretty epic party. But ever since we moved to the ‘burbs, 5 years ago, NYE has been different. Some of them have been fun, don’t get me wrong, but it’s a different energy. And now that we have a two little munchkins, the holiday has naturally been a lot more low-key. So, this year we decided it was time to host again, our favorite pastime! I’m putting together my menu as we speak and you can bet this dip is 100% on there!

Last week was a cozy snowy Sunday so this was a good chance to give the recipe a whirl. We served it with these awesome Trader Joe’s Rose Fingerling Potato Chips (don’t they sound so fancy!?) too which was a great pairing. But any brand of potato chips will totally work, as would a vegetable crudité if you want to go a slightly healthier route. And the beauty of this dip is that you can really get away with using any three cheeses you prefer (or have on hand) so you can reinvent this app whenever you want to. Having that flexibility makes it a real winner. I hope you’ll try it too and let us know what you think!
