Creamy Turmeric Chicken & Mushrooms
A delicious weeknight one pan dinner, made healthy with no sacrifices! Featuring the healing spice, turmeric, and lightened up with almond milk.
Ingredients
- 4-5 large boneless, skinless chicken breasts
- 4 TBSP flour (all purpose)
- 4 TBSP finely grated fresh Parmesan cheese + 1/4 cup (omit and make this dairy free- you won't even know the difference!) 2 tsp salt
- 1 tsp garlic powder
- 1/2 teaspoon cracked black pepper
- 2 TBSP olive oil
- 2 TBSP butter
- 1 small shallot finely chopped
- 6 cloves of garlic, minced
- 1 8 oz carton of cremini mushrooms, sliced
- 1/2 cup chicken stock
- 3/4 cup almond milk
- 1 TBSP dried turmeric
Directions
- Step 1 Preheat your oven to 400 degrees. Season the chicken generously with salt, garlic powder and pepper. In a shallow or plate, combine the flour, parmesan cheese. Dredge chicken in the flour mixture, shaking off the excess.
- Step 2 Heat 2 TBSP of oil and 1 TBSP butter in a large cast-iron skillet over medium-high heat until pan is nearly smoking. Swirl pan to coat evenly. Fry chicken breasts until golden on each side (about 4-5 minutes each side). Depending on the size of your pan, you may need to fry the chicken in two batches. Transfer chicken to a glass baking dish and bake in the oven for 8 more minutes, until cooked through and no longer pink.
- Step 3 Reduce heat to medium. Sauté the shallot and garlic in the remaining oil/juices in the pan until softened and fragrant. Add the remaining TBSP of butter to the pan, along with the mushrooms. Continue to sauté until the mushrooms soften.
- Step 4 Add the chicken stock to deglaze the pan. Scrape up any browned bit, let simmer and reduce to half, about 2 minutes. Reduce heat to medium-low. Pour in the almond milk and additional parmesan cheese and bring the sauce to a gentle simmer for about 2 more minutes, until cheese melts and the sauce starts to thicken. Whisk in turmeric and season with salt and pepper to your taste.
- Step 5 Add the chicken breasts back into the pan and let everything simmer together for 2-3 minutes, so that the chicken will soak up all of the incredible flavors!
- Step 6 Garnish with fresh parsley, additional turmeric and a little black cracked pepper. Serve over pasta, cauliflower mash, zoodles, rice or even crispy fried potatoes (like I did, see below!)
I hate starting a recipe post off on such a negative note, but this has certainly been a month I’d never wish to relive. We ended up having to switch au pairs (such a long and frustrating ordeal, I don’t even know where to start), everyone in our house was sick, and then, the worst imaginable thing happened – our family suffered the very sudden and tragic loss of someone near and dear to our hearts. I can’t even put into words what a difficult time it has been. We are devastated by this passing and it has honestly been such a struggle just to get through the day. So needless to say, the blog has not been a priority the past few weeks and neither has cooking. In fact, I didn’t even realize until today that this is my first post in February and it’s already the 22nd! I’ve literally been in a time warp. I hope you all understand and will forgive me for taking a little hiatus.
Yesterday felt like the first “normal” day we had had in weeks – the new normal, that is – and there was nothing I was looking forward to more than the distraction of cooking again. This recipe is the fruit of that motivation and is one that was *finally* blog worthy. It’s a simple weeknight dish that is slightly experimental, but still feels cozy. I added in the turmeric at the end for a little creative twist and it’s a risk I’m glad I took. The flavors pair delicously together!
