Mango Blue Cheese Avocado Toast
A new twist on avocado toast that is charged with flavor! Trust us, you will never look back once you've tried it.
Ingredients
- One French baguette (or toasts of your choice), sliced into 1/2 inch rounds
- 2 ripe avocados
- 1 1/2 tsp salt
- 2 tsp garlic powder
- 1 mango sliced lengthwise and then halved (see photos for reference)
- 1/2 cup crumbled sharp blue cheese
Directions
- Step 1 Toast your bread for about 3 minutes until golden brown. While toasting, scoop out the avocado and mash with salt and garlic powder. I like my texture to be pretty chunky, but you can mash to preference.
- Step 2 Top toasted rounds with mashed avocado, slices of mango, and then sprinkle with blue cheese. Serve immediately.
I’m going to come right out and say it – my hubby is a genius! I don’t know how he managed to dream this recipe up, but this is the most brillant combination of avocado toast toppings I’ve ever come across. Creamy avocado, topped with sweet juicy mango and tangy blue cheese is a flavor explosion in every mouthful. It took me awhile to jump on the avocado toast bandwagon, but now that I’m on it, I’m downright obsessed.
You can eat this all day every day – breakfast lunch or dinner – and it’s a great entertaining recipe too. For lunch today, I couldn’t resist topping it with slices of smoked salmon also; now that baby has arrived I’ve been eating smoked salmon like it’s going out of style! I know some of you will be scratching your heads at this recipe, but if you trust us, I promise you won’t be disappointed. Mark my words – this recipe right here is the reason that avocado toast will never get old!
