Honey Blueberry Muffins

Blueberry muffins with a special twist - honey! Or, in my case, date nectar, a honey alternative made entirely from organic California dates!

Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg, room temperature
  • 1 cup almond milk, room temperature
  • 1/4 cup butter, melted and slightly cooled
  • 1/4 cup honey* (+ extra for drizzling)
  • 1 cup blueberries
  • 2 TBSP powdered sugar
  • *Use D'vash date nectar instead to make an extra special batch!
Directions
  • Step 1 Preheat oven to 375 degrees. Prepare a muffin pan with cooking spray.
  • Step 2 Combine flour, sugar, baking powder and salt in a small bowl. In a large bowl whisk together egg and almond milk. Add butter and honey and whisk until fully incorporated. Add the dry mixture slowly to the wet mixture, mixing as you go, until smooth. Stir in the blueberries last.
  • Step 3 Fill muffin cups 3/4 of the way full. Then bake for 20 minutes or until a toothpick stuck in the middle comes out clean. Let muffins cool for 10 minutes. Dust carefully with powdered sugar.
  • Step 4 Remove each muffin individually with a knife inserted around the edge. Serve warm if you can and drizzle with extra honey.

When you’re stranded at home in the middle of a blizzard, what better to do than bake up a storm?!  I love having fresh muffins in the house and I had been dreaming up this recipe ever since we got our first shipment of date nectar from D’vash Organics. My friend Brian from college, who now lives in Israel, started this company which sells this incredible date nectar and he just sent me a sample this week. I know you’re wondering what date nectar has to do with this recipe, but believe it or not, date nectar is a vegan honey alternative made entirely from organic California dates! Who knew?!

 

 

As you know, I love trying new things (and not just in the kitchen, in life!), so my first experiment with the date nectar was to substitute it for honey in this muffin recipe. I’m telling you, you cannot taste the difference! If you want to use the honey you have in your cupboard, by all means do it, but I honestly recommend picking up a bottle of date nectar and trying it out yourself. They’ve started selling it in Whole Foods out in California, Arizona and Vegas – or you can always buy it straight through the D’vash website.

 

I made the last minute call to sprinkle some powdered sugar over the tops of the muffins when they came out of the oven. I thought it was a nice finishing touch, plus it matched the weather outside!

 

But then I couldn’t contain myself and I also added a drizzle of date nectar on top as well. It all depends how indulgent you’re feeling, but trust me on this – you won’t be disappointed if you do!
