Dark Chocolate Cadbury Cookies

By the taste of these cookies, you would never guess they're low-fat and gluten-free, but I can happily share that is 100% the case! You can make them with Cadbury eggs for Easter or easily sub-in chocolate chunks/chips for a no-guilt everyday treat!

Ingredients
  • 1 ripe avocado, finely mashed
  • 1/2 cup brown sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 TBSP water
  • 1/2 tsp baking soda
  • 1/2 cup mini Cadbury eggs, chopped (otherwise substitute 2 oz dark chocolate chunks
Directions
  • Step 1 Preheat oven to 350 and line a large baking sheet with parchment paper.
  • Step 2 Cream together the mashed avocado and brown sugar. The riper the avocado the better for this step! Add in the egg and vanilla and beat until well combined.
  • Step 3 Add cocoa powder and crushed Cadbury and mix until well combined. I used a mug to crush the mini-cadburys, they were hard to chop!
  • Step 4 In a small dish, dissolve baking soda in water, then stir the mixture into the batter.
  • Step 5 Use a spoon or small ice cream scoop to drop batter onto sheet pan, about 2 inches apart.
  • Step 6 Bake for 10 minutes. Remove from the oven and let stand on the baking sheet to cool. After 10 minutes, move to a baking rack.
  • Step 7 For best results, store in an airtight container in the fridge or freezer.

 

If there was ever a recipe where the picture doesn’t quite do a recipe justice, this was it. There was no way I could photograph these deliciously rich and fudgy dark chocolate cookies and get them to look as good as they taste (and believe me, I tried). But, the news gets better – they are super low-fat (I’m talking 70 calories a pop!) and entirely completely gluten free, thanks to their star ingredient – the mighty avocado!

 

Why on earth would you make avocado cookies? (I know my Dad would ask this so I figured I’d indulge the question). I don’t need to tout the health benefits of avocado, that one’s a no brainer. But, believe it or not, the avocado fruit (yes – it’s a fruit) is actually a super substitute for butter or oil in baking and one that doesn’t effect the taste in the least. If you were to do a taste test of these avocado cookies beside one using a traditional butter recipe, I would bet serious money you won’t be able to tell a difference.

 

 

Believe me, I’m all about everything in moderation, but isn’t it nice to know that sometimes, a seemingly indulgent choice can also be a healthy one too? Talk about the best of both worlds. This is one decadent cookie you can savor without any of the guilt, all while enjoying countless incredible benefits to boot!
