Classic Buttermilk Waffles

The most incredible buttermilk waffles, light and fluffy inside, with just the right amount of crisp on the outside. Brunch has never tasted so good!

Ingredients
  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 3 TBSP sugar
  • 1/2 teaspoon fine salt
  • 3 large eggs
  • 1 1/2 cups buttermilk
  • 1 stick (8 TBSP) unsalted butter, melted and cooled
Directions
  • Step 1 Combine the flour, baking powder, baking soda, sugar and salt in a large bowl.
  • Step 2 In a second bowl, whisk the eggs until smooth, then stir in the buttermilk and melted butter, until fully combined.
  • Step 3 Add the wet ingredients to the dry ingredients slowly, stirring as you go. Stir in any toppings if desired and then mix just until the batter comes together- there will be lumps. Cover and let sit at room temperature for at least 30 minutes.
  • Step 4 Heat your waffle iron. Spray the iron with cooking spray before each use. For each waffle, pour about 1/3 cup of the batter onto the iron. Cover and cook until golden brown and crispy ~3 to 4 minutes.
  • Step 5 Remove from the waffle iron and keep warm under tinfoil while the other waffles cook. Top with powdered sugar and syrup or get crazy with exciting new toppings!

 

Marc is the resident breakfast man in our house and he has quite an impressive resume of recipes under his belt: pancakes, crepes, omelets, egg cups, and breakfast sandwiches galore… the list goes on and on. But in the process of making our fried chicken & waffle themed dinner last month, I cooked up this buttermilk waffle recipe that is just to die for! And so, by pure luck, I’ve become the accidental waffle queen in our house.

 

This recipe is about as simple as it gets, but the combination of melting the butter and adding the most crucial ingredient (buttermilk, baby!) really take them to the next level. These waffles will definitely make you think twice about making waffles from a box ever again!

 

 

 

Don’t worry, we didn’t serve these babies by themselves! We eat Trader Joe’s Black Forest Bacon like it’s going out of style so clearly that was going on the plate. As well as these delicious caramelized hash browns that Marc whipped up:

 

And as delicious as they are on their own, I love to get creative with toppings, so except to see many iterations of these in the months to come. Today I did a play on PB&J by cooking them with PB chips  and topping with Trader Joes Mixed Nut Butter and delicious organic raspberries.
