Chocolate Peanut Butter Bites

The ultimate PB treat - bite size for minimum guilt and maximum indulgence!

Ingredients
  • 1 cup peanut butter (smooth or crunchy)
  • 1/2 cup powdered sugar
  • 1/2 cup rolled oats
  • 3/4 cup dark chocolate chips
Directions
  • Step 1 Mix the peanut butter, powdered sugar and oats in a mixing bowl.
  • Step 2 Roll the mixture into 1 inch balls and place on a baking sheet covered in wax paper.
  • Step 3 Put the balls in the fridge for 10 minutes to harden up.
  • Step 4 In a double boiler, over simmering water, melt the chocolate, stirring frequently so the chocolate won’t burn.
  • Step 5 Take the balls out of the fridge and roll in the warm, melted chocolate. We recommend using a fork or spoon to make this step as easy as possible!
  • Step 6 Place the balls back in the fridge for another 10 minutes. Once chilled, serve!

If you are as obsessed with peanut butter cups as I am, this recipe is likely to blow your mind.  It’s essentially our version of a homemade PB cup, in a small bite-sized ball.  A little more labor-intensive than going to the store and buying a bag of Reese’s, but worth the effort, I promise!  I discovered them this Christmas, when my Mom made them as a part of her cookie ensemble -she swears we’ve had them at many a Christmas in our house before but I don’t remember them!- and after I took one bite, there was absolutely no question that they were going up on the blog.  For now, I just have the one picture from this Christmas (it’s like a Where’s Waldo trying to find them on that plate!), but the next time I make them, I’ll update this post with better photos and a full step-by-step guide.
