Chicken Parm Pizza Margherita

Once you try this pizza, you'll never need a crust again!

Ingredients
  • Chicken:
  • 1 lb ground chicken
  • 1 tbsp kosher salt
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Breading:
  • 3 eggs
  • 1/2 cup flour
  • 3/4 cup bread crumbs
  • 1 tsp Italian seasoning
  • 1/4 cup panko
  • 1/3 cup olive oil
  • Topping:
  • 1/4-1/2 cup marinara sauce
  • 8 tbsp Parmesan cheese
  • 1 log of mozzarella
  • Fresh Basil
Directions
  • Step 1 Mix the ground chicken in a bowl with 1 tsp Italian seasoning, salt, garlic, onion powder and pepper. Press the chicken into a glass baking dish, 10 inches in diameter. If you don’t have a round glass dish, you can use a 9×9 baking tin, lined with parchment paper.
  • Step 2 Cover with plastic wrap and freeze for 2 hours.
  • Step 3 Preheat the oven to 400 degrees. Prep the mozzarella, by slicing the cheese into rounds (about 1/4 inch thick). You will probably want 4.
  • Step 4 In a large metal bowl, whisk the eggs well. Spoon the flour evenly onto a plate. On another plate, combine the bread crumbs with the panko and 1 tsp Italian seasoning.
  • Step 5 Remove the chicken from the freezer and carefully remove the patty from the dish. You can use a butter knife around the edges to loosen it from the dish.
  • Step 6 Coat the chicken with flour, evenly on both sides. Dip in the egg mixture, spooning the egg over the patty to make sure it covers the full surface. Then dip the chicken into the breadcrumb mixture and coat evenly.
  • Step 7 In a large skillet, heat olive oil over medium-high heat. Once hot, cook the chicken until browned (about 3 minutes per side). Transfer to a baking sheet lined with parchment paper.
  • Step 8 Spoon marinara sauce over the pizza. Sprinkle with Parmesan cheese. Place mozzarella rounds on top, evenly spaced. Cook in the oven for 25-30 minutes, depending on your oven. Top with fresh basil before serving.
  • Step 9 Serve with extra marinara sauce if desired. We love to sprinkle red pepper flakes and parmesan cheese over our slices, even chili honey too!

 

If you want to try a new take on the traditional chicken parm, look no further than this “pizza” recipe.  There’s actually no dough or crust on the pizza, just a glorious base of breaded and *lightly* fried chicken.  I could seriously devour this myself in just one sitting, but it’s more fun if you share it 🙂 This is a recipe we’ll definitely be serving to our kids someday – I’m seriously addicted!  See our step by step guide below.

 

 

After mixing the ground chicken with seasoning in Step 1, press the mixture into a glass baking dish.  If you don’t have a round glass dish, you can use a 9×9 baking tin, lined with parchment paper, but it won’t have the same visual effect.

 

 

After freezing for 2 hours, set up your breading station like so:

 

 

Coat the chicken with flour, dip in the egg mixture, and then coat evenly in the breadcrumb mixture.

 

 

After browning the chicken patty top with marinara and mozzarella and transfer to a baking sheet lined with parchment paper before popping in the oven.

 

 

 

Then all you need to do is patiently wait for the “pizza” of your dreams!
