Banana Peanut Butter Mini Muffins
A great snack size muffin, perfect for those days you need a little pick-me-up. Add a handful of mini chocolate chips for a an extra treat!
Ingredients
- 1 cup sugar
- 2 eggs, slightly beaten
- 1 tsp. vanilla extract
- 3 bananas, mashed
- 1/2 cup peanut butter
- 1 ½ cups flour
- 1 tsp. baking soda
- ½ tsp salt
- 1 cup mini chocolate chips (optional)
Directions
- Step 1 Preheat the oven to 350 degrees. Grease your mini muffin pan.
- Step 2 Mix together the sugar, eggs, butter, vanilla, mashed bananas and peanut butter. In a separate bowl, whisk together the dry ingredients and incorporate into the wet ingredients. Fold in the mini chocolate chips.
- Step 3 Scoop batter into the mini muffin pan and bake for about 12 minutes or until a toothpick comes out clean. Store in an air-tight container for up to 5 days.
I’m going through a major mini muffin phase of late. I am big on snacking and grazing and they’re the perfect grab-and-go size for my busy lifestyle. I have literally been toting around my muffin tin with me this week and they’re the perfect snack when my blood sugar drops and I just need a little pick me up.
These adorable little muffins are everything that is great about banana bread, just in muffin form! And with their peanut butter bonus, they are protein packed to give you a little extra burst of energy. I especially needed that after a long week of running around like a chicken with my head cut off this week!
Another plug for mini muffins? They are just the right size for my 11 month old. He has a big appetite, but he can’t really polish off a whole muffin yet. These on the other hand are the perfect size. I’m not giving him chocolate yet, so I made him a batch without the chips, but I love them in mine. I’m a big believer in “dark chocolate each day keeps the doctor away” (yup, I just made that a thing!) so I personally had to add them, but you do what works for you!
