Arugula Salad with Feta & Olives

A light and deliciously simple salad, perfect for a summer night or to whip up for a night of entertaining.

Ingredients
  • 1 package of fresh baby arugula
  • 1/4 cup feta cheese
  • 1/2 cup Kalamata olives
  • 2 TBSP good-quality olive oil
  • 2 TBSP freshly-squeezed lemon juice
  • 1 tsp freshly-cracked black pepper
  • 1 tsp sea salt
Directions
  • Step 1 Add arugula to a large metal mixing bowl. Drizzle evenly with olive oil and lemon juice, and sprinkle with salt and black pepper. Toss until combined.
  • Step 2 Transfer to a serving dish or salad bowl and then sprinkle with feta and olives. Serve immediately.

 

When it comes to entertaining, keeping it simple is sometimes your very best bet. This is the perfect example of a super simple recipe that will wow your guests but take you literally 5 minutes (yes FIVE!) to throw together. There are about a million and one variations of arugula lemon salads, but this one is my go-to because it’s so simple and versatile. Just toss, garnish and go!

 

My little secret? You don’t even need to measure the ingredients! Arugula, fresh lemon, some quality olive oil, and s&p – those can all be eyeballed and tweaked to taste. And when it comes to the extra elements of this salad, the world is your oyster. I recommend tossing it with Feta and Kalamata Olives, but a simple shaved Parmesan and a sprinkle of pine nuts would also pair beautifully. This is a recipe that you can make your own and truly be proud of.  So what if it’s the easiest thing you’ll ever make?! My lips are sealed!
